The way to examine a whole fish is you want to look at the eyes, make sure they're really clear. After a few days sitting around they can really get muddy. The flesh should be nice and bouncy. The fish should be nice and wet but not oily and mainly, it's going to be the smell. Really get in there. The closer you can get to it and smell it, the better. If it really smells like fresh and clean, it's going to be great.
