One of the most common mistakes that people make at the grill is just fiddling with the food too much. I know there's almost an irresistible urge to poke at it, and turn it, to move it around. But actually, in terms of flavor, it's much better to leave the food alone. One of the reasons we love the flavor of grilled foods is it has this seared, caramelized quality about it and that happens when you leave the food on the grate. Letting it brown and deepen in flavor. Course you're going to have to turn it at least once and if you have some flare ups you're going to have to move the food. But the less you move the food the better it's going to taste in the end.
