RECIPE
// Soufflé //
½ ounce espresso (chilled)
2 oz water
1 tsp white sugar
1 egg white

//Espresso Martini//
2 oz vodka
1 oz espresso (chilled)
3/4 oz Kahlua or other coffee liqueur
coffee beans for garnish

Instructions
Start with the soufflé. Add all soufflé ingredients to a shaker and shake with ice for 25-30 secs. Remove ice cubes and shake for 25-30 more seconds.
Pour the foam into a martini or coupe glass and set aside, while you work on the martini.

For the Espresso Martini, add vodka, chilled espresso, coffee liqueur (such as Kahlua) and ice to a shaker. Shake hard for 30 seconds.

Now it's time for the assembly! Poke a hole into the middle of the foam and carefully pour your martini mix into it. Your soufflé will rise up over the edge of the glass!

Garnish with the classic three coffee beans, and enjoy.
