Pectin is often used in jam recipes. It's used to help your jam set. Most people think that pectin occurs only in small packages and on your local grocery store shelf but you can actually make your own using ingredients as simple as green apples. Take two pounds of tart or under ripe green apples, stem and wash them. Cut cores and all and place in a pot. Boil for about twenty minutes. Dump them into a strainer and let it drip, preferably overnight. Reduce the remaining liquid for about twenty minutes. Place a couple of drops into a tablespoon of rubbing alcohol and if it gels then you're ready to go. Once you have your own homemade green apple pectin, you'll never use that crappy synthetic pectin ever again.
